The Hoshizaki SR72B-30MD4 is a Steelheart Series 72-inch mega top prep table refrigerator with one stainless door and four stainless drawers under a thirty-pan rail, holding 18 cubic feet of net refrigerated storage.

Four Drawers, One Door

This is the drawer-heavy middle of the SR72B mega top range. Four drawers, each fitted with a divider bar, cover the working two-thirds of the cabinet, and a single door keeps one section available for tall or bulky items that will not lie flat in a drawer. It suits a station where most of the day's product is portioned into pans but the cook still needs somewhere to put a cambro of sauce or a stack of half-hotels.

Drawer Access Versus Door Access

Drawers cost more than doors and are worth it on a hard-working line for two reasons: they spill much less cold air per opening than a full-height door, and they present product at the front rather than requiring a reach into the back of a section. On a station that opens storage constantly through service, that shows up as steadier hold temperature and less compressor run time.

Front Airflow and R290

Intake and discharge are both at the front of the cabinet, so it can be installed flush to a wall or between hot equipment. R290 natural refrigerant, 4 amps at 115V, 5.05 kWh per day.
