The Hoshizaki PR46B-D2 is the drawer version of the 46 inch Steelheart pizza prep table: the same 11.23 cubic foot refrigerated base and the same six-pan rail, but with two stainless steel drawers in place of the swing door.

Drawers instead of a door

A swing door needs clearance in front of it and forces a cook to bend and reach into the back of the cabinet. Two drawers pull the product out to the operator instead, which is faster on a line and means less cold air spilling out each time the base is opened. Each drawer takes 12 by 20 by 6 inch pans, so dough balls and prepped product come out in a full pan rather than being fished out by hand.

Rated for a hot line

Hoshizaki rates the Steelheart tables to hold food-safe temperatures at ambient conditions up to 100°F, which is the realistic condition beside a deck oven. Rail and cabinet are separately controlled: 16 to 36°F at the rail, 28 to 40°F in the cabinet. The table ships with six polycarbonate 1/3-size pans 4 inches deep, and accepts 6 inch pans on the rail if you want fewer refills.

R290 and the 7-7-7 warranty

The refrigeration system runs R290, a natural hydrocarbon refrigerant with very low global warming potential. Hoshizaki covers the series with seven years on labor, parts and compressor alike — a materially longer term than most prep tables carry, and the main reason to specify Steelheart over a budget alternative.
