The Hoshizaki KM-1100MWJ is the water-cooled build of the 30-inch Crescent Cuber, producing 1,073 pounds of ice per 24 hours. Choose it when the machine has to live somewhere that cannot take a thousand-pound cuber's condenser heat — a warm equipment closet, an interior room with marginal air movement, a basement prep area — and running remote refrigeration lines is not practical.

Water-cooled condensing: capacity that does not derate

An air-cooled machine loses output as the room around it heats up, which in a tight equipment space becomes a compounding problem: the machine warms the room, the room derates the machine. Water cooling breaks that loop by rejecting heat into the water circuit, so the KM-1100MWJ holds its rating in conditions that would cost an air-cooled unit real capacity. It also draws the least power in the family at 4 kWh per 100 pounds and runs noticeably quieter. The cost is water — 20 gallons per 100 pounds of ice at 90/70, plus a condenser supply and drain that belong in the site plan before delivery.

Crescent cube with dual-sided evaporator

Crescent ice interlocks loosely instead of packing, so it pours out of a bin and through a scoop rather than bridging into a solid mass — a genuine operational difference at this volume. Hoshizaki's dual-sided stainless evaporator with CycleSaver design harvests from both faces to shorten the cycle, and the EverCheck alert system flags developing faults before they turn into a no-ice morning.
