The Dukers DCSB36 is a 36-inch gas salamander broiler for kitchens that need overhead heat for melting, top-browning, toasting and finishing. A single 35,000 BTU/H burner works an 11.81" x 23.62" area inside a cabinet 36 inches wide, 18 inches deep and 17-7/16 inches high.

Three rack positions

The rack adjusts to three positions, which is what separates a salamander from a fixed-height cheese melter. Close to the burner you get fast, aggressive browning for gratins and crusts; drop the rack two positions and the same burner will hold or gently finish thicker product without scorching the surface. In practice a station can switch between those jobs mid-service without waiting for the burner to change temperature.

Roll-out rack loading

The grid rack assembly rolls out toward the operator, so plates go in and come out without reaching under a live burner. The broiler grid is removable for cleaning. On a unit that spends its life catching drippings from cheese and glaze, being able to take the grid to a sink rather than scraping it in place is what keeps it usable past the first month.

Fuel and installation

Rated 35,000 BTU/H on natural gas at 5" W.C. and the same 35,000 BTU/H on propane at 10" W.C., through a 3/4" NPT inlet. At 117 lbs net the DCSB36 is light enough to shelf- or wall-mount over a range, but confirm the mounting structure and required clearances before installation.
